Pepper & Rye had the wonderful opportunity to speak with Co-Founder, Colin Schilling about cider pressing and the over all fermentation process. Cider is made from apple juice which has undergone a couple different types of fermentation. Schilling sources all of their apples from Yakima Valley and infuses their juice with all natural flavors. Using apple varieties such as Granny Smith, Red Delicious, Fuji and Honey Crisp; they do a fantastic job of developing a smooth finish on every flavor.
I can boldly say my favorite flavor is the Oak Aged Cider; take note, this is not your standard cider! If you are a fan of beer or whiskey and have recently transitioned into a wheat or gluten free diet, this cider is right up your alley. It is fermented with 100% Northwest oak and has a subtle and smooth finish. Schilling's Oak Aged Cider is right at home on any bourbon lover's table.
