I took a deeper dive into the world of kale to find out exactly why we should be obsessed with this bitter leafy green. The most popular types of hale are curly, lacianto or dinosaur (pictured), red Russian, and redbor. My favorite is the Lacianto variety, if you couldn't already tell.
