Grain-free sandwich bites
These little sandwich bites are one of my favorite things to eat! Now, I will admit- they are NOT going to stay put when you eat them- they may crumble into bits.. but they are incredibly savory. Also- if done wrong, these can tend to be more on the dry side. Make sure you use a big chunk of tomato and some vegenaise!

***makes about 4 sandwich bites
Pepper & Rye's Grain-free biscuits
1 tbs Vegenaise
1 tomato (sliced)
Handful baby spinach
3 grilled chicken breasts (preferably seasoned with something on the spicy side)

Begin by cutting the grain-free biscuits in half and popping them in the toaster for a few minutes until they are golden brown. Chop your chicken into bite-sized pieces. Begin to assemble bites by slathering vegenaise on the bottom of each piece of biscuit and layering the tomato, spinach and chicken breast on top.
You are done. Yum.
