The more I look at my pictures of these biscuits the more I think they look like cheddar biscuits. Well, I assure you- that is not the case! These little guys are surprisingly moist and are perfect with your morning eggs or of course with butter and jam! 

/// Ingredients ///
(makes about 8 biscuits)
6 egg whites
3/4 cup almond flour
3 Tbs coconut flour
1 Tbs flax meal
Pinch salt
1 tsp baking powder
1 1/2 Tbs coconut oil (chilled) or butter, or Melt Organic Spread

/// Directions ///
Preheat oven to 400 degrees. Butter or oil a trusty bake pan. Mix almond flour, coconut flour, flax meal, salt and baking powder in a large mixing bowl. Cut in chilled coconut oil or butter and mix until mixture is crumbly. Place the bowl in the freezer for about 5 minutes. In another bowl, use an electric mixer to mix egg whites until they are extremely frothy/peak-like. Fold the egg whites into the chilled flour mixture GENTLY until all ingredients are well combined. Scoop a 1/4 cup or so of the mixture onto your buttered bake pan and smooth the top with a spatula or spoon. Feel free to use an ice cream scoop for this part if you'd like. Bake for 15-18 minutes or until the tops are golden brown. Serve warm or store in an airtight container in the fridge. Enjoy!
