raspberry orange crisp bites

Simple & Crisp Orange Crisps
1 bunch fresh raspberries chopped in half lengthwise
1 Theo Chocolate single origin bar
2 tablespoons honey

Lay out as many crisps as you desire onto a surface you don't mind getting messy. Parchment paper works great for this. Boil a small saucepan of water. In the meantime, break your chocolate bar into small chunks and throw into mixing bowl. Hold mixing bowl over saucepan of water and begin to whisk until all the chocolate is blended. When the chocolate is dry and shiny you have reached a good temper. Remove bowl from hot sauce pan immediately. Using an instant-read thermometer check the temperature, which should be between 86 and 90 degrees F. (Any hotter and the chocolate will burn and won't look very pretty when it's dried). If chocolate is too hot make sure to wait until dipping.
Begin to dip your orange slices halfway into the chocolate and set on parchment paper to dry. Make sure this process is quick because chocolate will begin to harden. After all the crisps have been dipped place in freezer for about a half hour so they can fully harden. When completely cooled, place half of a raspberry in the center of each crisp. Grab a spoon or honey wand and begin to drizzle honey on crisps and top off with sea salt! Bring these to a fancy party and wow all your friends.
