2 medium sized fresh whole rainbow trout
2 lemons
1 bunch fresh oregano
2 tbsp garlic olive oil
1 pinch salt
1 pinch cracked black pepper

Fire up the grill! Yet again, I am using my trusty George Foreman outdoor grill because it is just that awesome. Clean and gut the trout thoroughly making sure to keep head and tail intact. - If you are not sure how to do this- please watch this video tutorial. Slice lemons length wise and insert into fish along with oregano sprigs. Drizzle garlic olive oil along with salt and pepper inside of the fish. Place fish on grill and grill covered for 7 minutes on one side- then flip and grill 7 minutes on the next side. Fish should be completely tender and cooked at this point, lemons should be tender and dewy as well. I enjoyed this dish with my favorite white wine of the moment: Darby 2012 "Le Duece". It is 52% viogner and 48% roussanne and 100% AMAZING.
