theo chocolate-dipped banana bites
We all need a tasty midnight snack and let me tell you, these babies never cease to fail me. The fact that I'm using Theo Chocolate should say it all. I happened to have some left over chocolate from my delicious ganache class.. hence why the chocolate bar shape looks a bit funny in the pictures..

1 Theo Chocolate single origin bar
2 tbs himalayan salt

Slice your banana into 1 inch pieces and set flat on a large piece of parchment paper. Boil a small saucepan of water. In the meantime, break your chocolate bar into small chunks. Throw chocolate chunks into mixing bowl and set over boiling bowl of water. Using whisk, stir vigorously until chocolate is completely melted. If the chocolate is dry and shiny, you have achieved a good temper. Remove bowl from hot sauce pan immediately. Using an instant-read thermometer check the temperature, which should be between 86 and 90 degrees F. (Any hotter and the chocolate will burn and won't look very pretty when it's dried). If chocolate is too hot make sure to wait until dipping.
This next step is a very involved process- lots of multi-tasking necessary! Begin to dip your banana chunks into the chocolate using a fork and set on parchment paper immediately. When chocolate is nearly dry- make sure to sprinkle your himalayan salt so you get a nice crystalized effect. If you sprinkle the salt right away- it will melt into the chocolate and it won't have the same sex appeal once it's dry. You want these to look sexy don't you!? We are working with chocolate here!
