surprisingly easy roasted brussel sprouts

Serves 1 or 2 as a side dish.
***Cast iron skillet preferred. 

/// Ingredients ///
1 bunch brussel sprouts
1 lemon cut in half
2 cloves garlic diced lengthwise
1 tbsp coconut oil
1 pinch salt
1 pinch pepper

/// Instructions ///
Warm up a cast iron skillet on medium heat. Slice brussel sprouts in half. Pour coconut oil on skillet and once melted, place brussel sprouts half side down. Toss in garlic as well. Cover skillet and simmer for about 15 minutes. Flip sprouts over and season with salt and pepper and cook for about 10 more minutes or until fork-tender. Remove brussel sprouts and garlic and put into mixing bowl. Squeeze lemon on brussel sprouts and mix thoroughly. Serve immediately.
