Ok, so I will admit.. these version of Lara Bars are very endearing and definitely have that 'homemade' look to them. I have no shame! When I make these babies I eat them so fast that there is no room for perfection.

1 cup raw almonds
1 cup dried cherries
1/4 cup pitted whole dates
1 cup warm water
1/2 tsp cinnamon
1/4 tsp sea salt

Combine cherries and dates with water in a small bowl for about 10 minutes or until thoroughly soft. Drain the fruit and pat dry with paper towels. Meanwhile, place the almonds in a food processor and process until finely chopped. Start to add in the cherry and date mixture and pulse for about 2 minutes. Make sure to scrape the sides of the processor with a spatula to get everything moving around evenly.
Transfer mixture to a pan. Place a piece of large parchment paper with a bit of oil atop the bar mixture and use it to spread the mixture into the pan. Refrigerate for 30 minutes or so.
Using the paper, lift the bar mixture off of the pan and transfer directly to a cutting board. Chop mixture into about six bars. Tightly wrap each bar in plastic wrap. These babies will keep for about 3 days in room temperature and about 3 weeks if you refrigerate.
