Everyone loves a good fried starch. Here is a healthy alternative to fries. I make these baked sweet potato fries religiously. 

/// Ingredients ///
1 sweet potato
1 tsp salt
1 dash black pepper
1 tsp chili powder (adjust to preferred spice level)
1 tbsp coconut oil

/// Instructions ///
Preheat oven to 400 degrees and gather your ingredients. Please use my seasoning measurements as a guideline. If you like your potatoes saltier or spicier- please adjust. Begin by chopping your potato in half. I like to use a meat mallet to cut through the first half as it can be very tough. Chop to your thickness preference. I find that if you chop too thin the fries don't hold their structure very well so I like to keep my fries a little on the thicker side. After you've finished chopping the whole potato grab a mixing bowl and and throw in your salt, ground pepper, chili powder, melted coconut oil and mix thoroughly. The coconut oil may harden again- don't worry about that. Lay out your fries on a baking pan. Throw pan in the oven for about 40 minutes or to desired crispiness. Make sure to flip fries once or twice throughout baking process. Voila! Enjoy either solo or with your favorite aioli!
