all coconut chocolate chip chip cookies

Who doesn't love a good chocolate chip cookie? I make these babies all the time and I NEVER feel guilty after eating them. ***Take note: these measurements will feed about 2 people at most- please double or triple portions if you'd like to feed the masses! Also take note! This recipe is NOT vegan! If you can find an egg replacement- feel free to try it out. Otherwise, I'd stick to this version. 

/// Ingredients ///
1/4 cup melted coconut oil
1/3 cup coconut flour
1/4 coconut sugar
1/3 cup dark chocolate chips
1 tsp vanilla extract
1 pinch sea salt
2 whole eggs

/// Instructions ///
Preheat oven to 350F. You can use parchment paper if you'd like but it's not really necessary- they won't stick. In a medium bowl whisk together melted oil (make sure it's not hot), coconut flour, coconut sugar, vanilla, sea salt, eggs until a batter is formed. Add in the chocolate chips and distribute evenly. Use a tablespoon or your bare hands to form cookies. Keep in mind these cookies will not melt or spread like your grandma's cookies so whatever shape you form is the shape they will hold after they've been baked. Bake for about 12-14 minutes until golden brown. Transfer to wire rack to cool completely.

Enjoy with an ice cold glass of almond milk or coconut milk!
