3 parsnips
3 tbsp coconut oil (melted)
1 tbsp herbs de provence
1 tsp salt

/// Directions ///
Preheat oven to 425 degrees. Cut parsnips in half lengthwise. Start slicing into smaller fry-like pieces. Place on baking sheet and toss with melted coconut oil, salt and herbs de provence. Cook for 35-45 minutes flipping once halfway through. PLEASE keep an eye on these guys as every oven temperature is just a little bit different. You can always pick out a fry and test-taste to see if you'd like it more on the crispy side or not. Enjoy!
