Sweet maple roasted acorn squash

1 acorn squash
2 tbsp maple syrup (any grade works fine)
1 tbsp coconut sugar
2 tbsp room temperature ghee or butter

Preheat oven to 400 degrees. Using a mallet and a knife, carefully and evenly chop acorn squash in half. Remove and discard seeds. Spread 1 tbsp butter inside each cavity of squash and also on top. Sprinkle each squash with coconut sugar and drizzle with maple syrup as well. Fill a roasting pan 1/4 full of water and place each squash on pan and pop in oven for 1 hour making sure to baste every 15 minutes or so.
