Kale & Beet Salad

/// Ingredients ///
**serves  2 as side salad or 1 as an entree
2 whole beets
2 leaves (or so) chopped dinosaur kale
1 tbsp olive oil
1 tsp apple cider vinegar
pinch salt
1/4 tsp chili flake

/// Directions ///
Bring water to a boil. Boil beets for about 20 minutes. Once beets are cooked, place them in an ice water bath and peel off skins. When beets are fully cool, begin to dice evenly. Using a large mixing bowl gently toss all ingredients (except chili flake) in bowl. Be careful not to destroy the beets. Assemble salad however you'd like and sprinkle with chili flakes. Viola! Enjoy.
